As we mentioned earlier, some nutrients effective to a degree in slowing cross-linking include cysteine (a sulfur-containing amino acid, which helps maintain sulfur in proteins in the reduced state); vitamins A, B-1, B-5, B-6, C, E; the mineral selenium; and other antioxidants. Dr. Johan Bjorksten first formulated the cross-linking theory of aging (he was originally studying the process of tanning!). Raw pineapple and raw papaya also contain large amounts of the proteolytic (protein-digesting) enzymes bromelain and papain respectively..When these foods are eaten fresh, significant quantities of these protein-dissolving decross-linking enzymes are found in the blood. While not as specific for cross-links as micro-protease, they are readily
available right now in any supermarket. Some cross-linked and some non-cross-linked protein will be dissolved by these enzymes. The body will soon replace the non-cross-linked protein. Perhaps raw pineapple and papaya play a part in the relatively smooth, youthful skin enjoyed by many Polynesians in spite of long hours spent in the harsh tropical sun.
As with most things, you can go too far. When your mouth becomes sore and tender (especially at the corners of your lips), you are eating too much raw pineapple and papaya. Don’t eat either of these foods if you have an ulcer—the speeded-up rate of protein digestion will slow healing. These
raw foods can also be applied topically to the skin, thereby slowly dissolving the old highly cross-linked collagen protein so that it can be replaced with new young collagen (the new collagen made by even very old people is chemically identical to new collagen made by young people). You do have natural repair mechanisms which slowly replace cross-link damaged molecules. By using anti-cross-link nutrients, you can slow
your rate of cross-link damage and give your overworked repair mechanisms a chance to catch up. This is a slow process, however, and requires plenty of patience. The time normally required to replace half the collagen in your body is several years. Don’t expect to remove a half century of cross-linked tissue in a few months.
